The vineyards are managed with great care, the use of synthetic products is very limited, and techniques in order to reduce production are carried out. Green harvest during July and August and selection of clusters during harvest time, make it possible to obtain high quality grapes. The clusters are soft-pressed and the must is then racked into fermentation vats where temperature and extraction are controlled. All wines are matured in small oak barrels for different periods of time in order to enhance the character of the varietal as much as possible and to obtain well balanced wines.
